Exclusively manual with rigorous selection of fruits that are in good sanitary conditions and maturity in the vineyard and in the winery using a sorting table.
Date of Harvest: second week of October 2010.
Tempranillo (100%) Tempranillo from vines more than 30 years.
Winemaking: Traditional elaboration destemmed (100%). Alcoholic fermentation for 8 days with selected native yeast from our own vineyards and temperature control between 28 ° C and 30 ° C. post-fermentation maceration with the skins for 14 days. Remounted twice a day until the end of fermentation. During maceration, pumping frequency is decreased as the process progresses, to prevent the extraction of vegetable and bitter characters.
AGING: In French oak barrels (50%) and American (50%) oak 225 l. for 18 months. Age of Barrel: 20% new, 80% maximum of 3 wines. Racking every 4 months. Bottle: Bottled unfiltered in January 2011.
