Rebel Rebel 2017 is the first vintage of a new path that is beginning. It doesn’t come just because. It responds to years of crises and breakups, to reflections on where we take our wines and our lives; For a winegrower I understand that everything goes together. Also to another conception of viticulture and production methods in which we have “inevitably” been immersed.
VINEYARD
Soil with a sandy loam texture, shallow, with very low fertility. Subsoil of “cayuela” and sandstone. Free of herbicides since its plantation, starting in 2017 it switched to biodynamic management with very low doses of copper and sulfur complemented with essential oils, horsetail and nettle decoctions.
ELABORATION
Manual harvest, direct pressing of whole grapes without crushing or destemming. The must was statically settled without sulfite, to begin fermentation spontaneously with its indigenous yeast in a used 85% French oak barrel and 15% stoneware amphora. After more than 8 months of alcoholic fermentation overlapped with partial malolactic, it moved from the barrel to open stainless steel where its oxidative development continued.The Txakoli Rebel Rebel has been racked by gravity and has not been clarified, stabilized or filtered.
IZAKI
VINEYARD
4.0 hectares in the “Los Atravesados” area of the Castillo La Piedra area, at 200 meters above sea level, facing south and with a 25% average slope. Poor sandy loam soils.
Plantation with open lyre formation, aimed at obtaining small clusters of complete and homogeneous maturity, with yields around 5000 kg/Ha. Intense manual work in order to preserve good health without applying systemic treatments.
100% Hondarrabi Zerratia (Petit Courbu)
ELABORATION
A selection has been made from their 20-year-old vineyard, from the poorest stands and, with a light pressing, only the flower must ferments spontaneously in selected used barrels.IZAKI remained in oak barrels (previously used in SO France) for a year between alcoholic and malolactic fermentation as well as aging on lees (without batonnage).
TASTING NOTES
It is a very balanced, friendly and complex wine, where ripe vegetal sensations are integrated together with a smooth evolution on the lees. In the mouth it is broad and tasty.A good evolution in the bottle is anticipated in the coming years.
