The power of the Mediterranean. Born in 1994, Ànima Negra is the reference winery for authentic, personal and quality wines from the island of Mallorca. Her alma maters are Miquel Àngel Cerdá and Pere Obrador who have been carrying their philosophy of conceiving wine around the world for more than 25 years.
The Ànima Negra winery, located on the island of Mallorca, makes its wines in the old “possessió” of Son Burguera. This building, near Felanitx, dates back to the 16th century. XIII and from its beginning it had facilities for the production of wine, intended to supply the consumption of the local people. This activity has survived continuously to the present day and has contributed to shaping the island landscape, geographically integrated into the Mediterranean. The cultivation of the vineyard, with advances and setbacks, and with an important or secondary role for the economy, has become part of its culture. Current winemaking work does nothing more than perpetuate an ancestral activity.
ELABORATION
Double selection of grapes, manual and optical, which through a gravity system is transported to the stainless steel and cement tanks. Native yeasts from our own vineyards have been used from the genetic bank formed during years of identification and selection of yeasts, which has allowed us to delve deeper into the typicity of our varieties. Alcoholic fermentation in 10,000 liter stainless steel and cement tanks at a maximum temperature of 28°C. Malolactic fermentation takes place in cement and stainless steel tanks, and then goes into barrels.
AGING
It is aged in 225-liter French and American oak barrels for a period of 12 months.
