Fincas of Ganuza Reserve
The Fincas de Ganuza Reserve is made from the shoulders of the best grape clusters from vineyards with an age between 25 and 40 years. New barrels of French and American oak are responsible for the aging of 24 months.
ELABORATION
The harvest is done manually in boxes of 12 kg.Before fermentation, the grapes remain for 24 hours at a controlled temperature of 4-6 ° in the cold room. In table is made the minute manual selection of the grape for the separation of the shoulders and tips of the clusters. To elaborate the wine Fincas de Ganuza Reserve only the shoulders of the bunch are de-stemmed and the tips are separated. The fermentation takes place in oak tubs of 7,000 liters and stainless steel tanks. The malolactic fermentation is carried out in new barrels.
VARIETIES
90% Tempranillo and 10% Graciano.
BREEDING
24 months in new oak barrels, 70% French and 30% American.
TASTING NOTE
We see violet flashes in cherry cloak. Aromatically intense, ripe and toasted fruits. Powerful entry in mouth, with warm barrel step. Long finish and good acidity.
MARRIAGE
Roasted lamb, sausages, roasted red meats, big game and cured cheeses.
