Manuel Quintano 2014
The objective of this wine is complex and elegant expression of a book long stay in barrels, introducing Grenache likeness of reservations were made in the first half of the twentieth century in the absence of intensive viticulture. The drastic grape selection is motivated by the need for good phenolic condition so that the wine can overcome the years of cellaring with slow and positive development.
VARIETAL
This wine is a blend of 70% + 30% garnacha tempranillo; in both cases are hand picked grapes in vineyards more than 52 years of age, arranged in glass and placed between 500 and 600 meters. This mixture of grapes assume 2% of the production of our vineyards perfectly explains the level of selection that has been carried out.
WINEMAKING
The de-stemmed grapes are encubó for 25 days in concrete tank with thermal control at 28 ° C. Posterior bleeding new wine by gravity and second fermentation (malolactic) spontaneously after 45 days.
BREEDING
Phase 1: After discarding 20% of wine produced (second selection in the winery on already fermented wines) based on the qualitative condition of color, essential to define a wine that will have a long evolutionary life factor, was kept for 30 months in American oak barrels of medium toast and handling of cleaning every 10 months. No new barrels are used if there are two, three and four years old.
Phase 2: After the cask wine only needs a slight fining with egg white and a final decanting, which allows bottling without filtration. The minimum bottle aging we set for this reservation is 24 months. It was bottled in August 2008.
VIEW

NOSE
Intense, complex, kind and evolutionary: wine pinpoints slowly as varied shades will aerating. Base black cherry fruit, cocoa, spices and smoky light. If we give time to drink roasted nuances emerge. perfectly integrated, noticeable but without covering the fruity and spicy wine wood character. Complexity in full swing.
MOUTH
