Remirez de Ganuza Reserve 2010
The Remirez de Ganuza Reserva is the essence of the winery. It is made from the shoulders of the best grape clusters from vineyards with an average age of 60 years. The new barrel is always present in both malolactic fermentation and breeding. Every year we look for the elaboration of the Remirez de Ganuza Reserva, the faithful reflection of its vintage.
ELABORATION
The harvest is done manually in boxes of 12 kg. Before fermentation, the grapes remain for 24 hours at a controlled temperature of 4-6 ° in the cold room. In table is made the minute manual selection of the grape for the separation of the shoulders and tips of the clusters. For the elaboration of the wine Remirez de Ganuza Reserve, only the shoulders of the bunch are de-stemmed. The fermentation takes place in oak tubs of 7,000 liters and stainless steel tanks. The malolactic fermentation is carried out in new barrels.

90% Tempranillo, 5% Graciano and 5% skins of Viura and Malvasía
BREEDING
26 months in new oak barrels, 95% French and 5% American.
