Sierra Cantabria Crianza
Integrated viticulture, respectful with the environment, minimal intervention, a perfect adaptation to the ‘terroir’ and without the use of herbicides or systemic products, in line with the biorhythms of nature. Organic fertilizer. Exclusively manual harvest with rigorous selection of fruits that are in optimal sanitary and ripening conditions in the vineyard and in the winery by means of a selection table.
Harvest date: October 2016.
WINEMAKING
Traditional, 100% destemmed. Controlled fermentation between 26 and 28º C with native yeast selected from our own vineyards. Maceration with the skins for 24 days, with two pumping over daily at the beginning and a light pumping over during the last ten days. Aged for 14 months in French and American oak Bordeaux barrels. Age of the barrel: maximum of three wines.
TASTING NOTES
Ruby-red of medium-high intensity, with slight orange hues on the rim of the glass. Intense aroma with light lactic notes, red fruits and spices. It shows a good development of the secondary aromas of the aging (vanilla, cocoa, roasted). In the mouth it is tasty, well armed, with ripe tannins in a good acidity-alcohol balance. The fruity character slightly dominates over the toasted, roasted, cocoa and vanilla flavors, giving it complexity.
