When the grapes reach the desired degree of maturity, a manual harvest is carried out in boxes to respect the integrity of the bunch and optimize the quality of the grapes upon entering the winery.

Currently the geographical area of ​​the Getariako Txakolina Denomination of Origin is the historic territory of Gipuzkoa with 402 hectares of vineyards. This, mostly in vineyard, is 91% in coastal areas.

The white grape variety Ondarrabi Zuri is the main variety with which the Getaria txakolí is made.

Getaria Txakoli is identified by the numbered Guarantee Seal that is placed above the capsule of each bottle and that guarantees that the registered wineries comply with the provisions of the Regulations and current legislation.
