Txakoli Hiruzta Special
Txakoli Hiruzta Special is a modern-style txakoli made from Hondarrabi Zuri grapes, grown in the property’s vineyards in Hondarribia. This txakoli expresses the character of the cultivation soil of the Hiruzta estate, which together with a unique temperate Atlantic climate, allow to obtain a wine of great personality and originality, where tradition and modernity are combined.
Harvest selection in a Hondarrabi Zuri vineyard plot with the best ripening conditions and collection in small capacity boxes. Shelling and crushing followed by gentle pressing. Cold static racking at 8º / 10º C. Fermentation at a controlled temperature between 16º and 18º C. Aging on lees in tanks for four months with weekly stirring without aeration. Gentle clarification and stabilization. Sterile bottling by amicrobic filtration.
With a beautiful pale greenish yellow color, it offers intense aromas of white fruits (apple), citrus (grapefruit), subtle floral notes are also perceived. In the mouth it is very fresh, with a highly integrated acidity, with body and volume typical of the variety and enhanced by working on its lees. Long, enveloping, aromatic and very persistent finish.
Appetizers, hors d’oeuvres, under-aged cheeses, seafood, fish, rice and legumes. Serving temperature: 8º to 10ºC. Store in a cool place, in the absence of lighting and in a place free from foreign odors. Good evolution in the bottle for the next three to four years. A long aging txakoli with a very good evolution in the bottle.
