Txakoli Hiruzta Young
DESCRIPTION
Hiruzta is a txakoli that combines classicism with a modern style, made from the native Hondarrabi Zuri grape, grown in the property’s vineyards in Hondarribia, and made in a unique winery equipped with the most current technology.
ELABORATION
Harvest collected and transported in small capacity boxes. Shelling and crushing followed by gentle draining and pressing. Static settling of the yolk must cold at 8o/10o C. Fermentation at a controlled temperature between 16º and 17º C. Conservation in tanks at low temperature to keep the endogenous carbon dioxide of natural origin in dissolution. Gentle clarification and stabilization. Sterile bottling through amicrobic filtration at low temperature.
TASTING NOTES
Clean and bright. Pale yellow color with greenish reflections. Poured into the glass from a certain height, the presence of very fine carbon dioxide bubbles typical of this type of txakolis can be observed. Intense aromas of white fruits (pear and apple), citrus fruits (grapefruit) and tropical fruits (pineapple and passion fruit) appear on the nose, all of them enhanced by the subtle release of natural carbon dioxide. In the mouth it is very balanced and fresh, with a certain spicy needle sensation on the tongue and a very integrated acidity. Pleasant palate, with citrus and tropical notes in the aftertaste. Long and aromatic finish.
GASTRONOMY
Appetizers, hors d’oeuvres, lightly cured cheeses, seafood, fish, rice and legumes. Service temperature: 8º to 10ºC. Store in a cool place, in the absence of lighting and in a place free of strange odors. Good evolution in bottle over the next two years. Total guarantee of absence of aromatic defects derived from the closure system used.
