Txakoli Doniene XX
Txakoli DONIENE XX is a white txakoli, 100% of the Hondarrabi zuri variety and aged in French oak barrels. We present its characteristics that for several reasons make it special:
Harvest 2019. 100% Hondarrabi zuri. It is only made in years of good maturation. 2019 was a year with the start of the vegetative cycle at the end of March, a mild spring typical of the area with good plant development and good fruit set in mid-June. The summer was cooler than usual with the end of August and the beginning of September markedly dry and hot. Ripening was slow without a final blow from the southerly winds that arrived at the end of October. Bunches were selected from the Panadiene, Iturriaga and Artatxu estates, all located in Bakio and harvested between October 12 and 15.
Elaboration: manual harvest with selection of well-formed bunches. The grapes enter the winery within a maximum period of three hours and undergo a second selection before destemming. Cryomaceration to obtain the maximum aromatic extraction. Elaboration from tear juice, juice obtained without pressing the grapes. Fermentation with own autochthonous yeasts, aging on lees for three months in tanks and aging in French oak barrels for six months. Bottled in September 2020. Subsequent aging in the bottle.
About the name of the wine: the owners of the winery have named this txakoli DONIENE XX, in reference to the twenty years of existence of the DONIENE GORRONDONA winery. It was the year 1994 when the current owners began their journey in the recovery of the txakolinera tradition of Bakio. Therefore, twenty years have passed to produce this txakoli from the 2014 vintage. It was also 1996 when the current owners formally established themselves as a company, and it is twenty years later when they present this very special wine.
About the image: the image on the label corresponds to the painting by Adolfo Guiard called “El Aldeano de Bakio”. The winery has chosen this image for its artistic value. Adolfo Guiard is a classic of Basque painting who brought the novelty of impressionism from Paris. Born in Bilbao, he lived in Bakio at the end of the 19th century. He painted this painting commissioned by Ramon de la Sota along with “La Siega” and “De promise”. The painting, which represents a rural scene in Bakio, aroused controversy at the time: it received praise and also criticism for the impressionist style of the work and its use of color. The painting currently belongs to the descendants of Ramon de la Sota, who have ceded it to the Bilbao Fine Arts Museum, to temporarily exhibit it along with the other paintings in the series.
Knowing this fact, the winery contacted through the Museum of Fine Arts with the owner of the painting, who has given the painting for the design of DONIENE XX.

Tasting note: it is recommended to open half an hour before consumption. Straw yellow in color with lemon reflections, its nose is fine and elegant, austere, fresh quince, with hints of green tea and fennel. On the palate it is silky and elegant, highlighting the harmony between acidity, wood and fruity and spicy sensations. The journey in the mouth makes the wine very appetizing.
Pairing: given the great structure of the wine, it accompanies very well with oily fish such as turbot or squid. Also with smoked fish, cheese, foie gras and meat dishes. It is not an aperitif txakoli.
