BAIGORRI Maturana
The winery is designed to fully respect the integrity and richness of the grapes. Located in the town of Samaniego and under the Sierra de Cantabria is Bodegas BAIGORRI, a glass box perfectly integrated into its surroundings, which emerges in an emblematic place in the Rioja Alavesa. Inside, the winery has the most advanced technology, the result of technical experimentation. It is framed within a process of continuous improvement and develops numerous research projects.
ELABORATION
Experimental vineyard planted in 2009 with yields of 1,200 kg depending on the vintage. Made in 4 barrels of 225 liters in an artisanal way. Manual shelling and subsequent intracellular maceration for 5 days. Fermentation takes place at 22-24 degrees, which allows it to be extended to 20-25 days. During the alcoholic fermentation it is not raised, it is only punched down by wetting the hat and submerging it in its entirety. Then it goes to new French oak barrels to carry out the malo-lactic fermentation in rooms with temperature control at 21 degrees. 100% Maturana, a forgotten and native variety of Rioja Alavesa. With a surprising and very powerful aromatic profile, this almost extinct variety has everything to make very great wines.

TASTING NOTES
Baigorri Maturana is deep purple in color with a high layer. The variety with the most color layer that BAIGORRI has. The aroma is clean with compote fruit, and a well-integrated wood with notes of cocoa and pastry. On the palate it is tasty, broad and long.
