ELABORATION
The good weather accompanied the harvest, helping the campaign to be managed easily and without complications. The grapes with which the Mar de Frades Finca Valiñas is made come from vines over 30 years old. The selection by hand of all the grapes is essential to control the irregular ripening of the different plots. Before the grapes reached maceration, 15% of the bunches were discarded. Maceration takes place for 20 hours cold. Once the fermentation has started, a part of the wine is put in French oak barrels for about 6 months, the rest of the wine continuing its aging in stainless tanks on its own lees, being periodically stirred.
TASTING NOTES
