From the heart of the Urdaibai biosphere reserve, in Muxika (Bizkaia), Jose Angel offers us Txakolis made in silence, which only make noise when they enter our mouths. A place at 180m above sea level, on the slopes of Mount Oiz and with views to the island of Izaro in Mundaka.
The vineyard is managed on double guyot trellises with Integrated Production techniques. Manual harvest in boxes and destemming, with subsequent cold maceration. Fermentation in stainless steel tanks at a controlled temperature of 16º. After a slight clarification, amicrobic filtration is carried out at 0.45.
Greenish yellow color, with aromas of white flowers, lemon, pineapple or honey. On the palate it is voluminous and citric.
