From the heart of the Urdaibai biosphere reserve, in Muxika (Bizkaia), Jose Angel offers us txakolis made in silence, which only make noise when they enter our mouths. A place 200 meters above sea level, on the slopes of Mount Oiz and with views to the island of Izaro in Mundaka.
The vineyard is managed on double guyot trellises with Integrated Production techniques. Manual harvest in boxes and destemming, with subsequent cold maceration. Fermentation in stainless steel tanks at a controlled temperature of 15º. For 8 months it rests on its fine lees and after light clarification, amicrobic filtration is carried out at 0.45.
Yellow color and aroma of white stone fruit. Voluminous on the palate, citric and persistent.
