Txakoli TXOMIN ETXANIZ TX
Txakolí made with grapes of the indigenous variety Ondarrabi Zuri, from ancient vineyards in Getaria. It has been vinified in acacia barrels to respect fruitiness and made on its own lees.
Txakoli Txomin Etxaniz TX is a white wine that we can taste at a temperature between 8 ° and 12 ° C. When it comes to accompanying it, there is nothing better than white fish baked or in sauce, spicy dishes (Indian, Mexican or Thai cuisine), white meats both in stews and roasts, feather game or mushrooms in risotto and scrambled eggs.
ELABORATION
We can enjoy this barrel-fermented txakoli for the next 4 or 5 years, always keeping it in a dark place, without light and with the bottle placed in a horizontal position. The TX is made with grapes selected from a 60-hectare plot of old vineyard located on the shores of the Cantabrian Sea, its proximity to the sea and the sea breeze gives the peculiarity of giving a slight salty nuance to this fermented txakoli on its own lees. Although it may seem the opposite, the wine fermented in barrel has less wood notes than a wine fermented outside the barrel and then aged in the barrel.
Txakoli Txomin Etxaniz TX is the most delightful wine from the Getaria winery and the novelty of the Gipuzkoan cava catalog. It is a wine made from Hondarrabi Zuri grapes from ancient vineyards over 80 years old. Its fermentation is done on its own lees and yeasts. It then goes through a 6-month aging period in French acacia barrels.

In tasting, it is shown as a txakoli with a subtle balance with respect to the fruit, with fine aromas and round in the mouth. This wine is subject to the regulations of the Getariako Txakolina appellation of origin, with Txomin Etxaniz being the oldest winery in the appellation of origin.
The Txakoli Txomin Etxaniz is straw yellow, fine natural carbonic. Subtle floral aromas of exotic fruits with mineral notes. In the mouth it is round, fresh, fruity and with characteristic acidity.
