Txakoli Inazio Urruzola
The vineyard is his home, they take close care of their vineyards, which surround the 14th century Garaikoetxea farmhouse in the town of Alkiza. Producing wine is his hobby, but also his way of life. They have recovered the essence of the farmhouse, the harmony between nature and humanity: they live off what the land gives us.
The grapes are picked by hand from each of the plots. The grapes come from our own vineyards located 8 km from the coast and from other growers located on the shore of the Cantabrian Sea. Our vineyards are 350 m above sea level, and the other companions are located no more than 90 m above sea level.
ELABORATION
Fermentation is carried out separately according to variety and plot. The grapes are selected before pressing. The wort goes directly to the stainless steel tank, controlling the temperature to keep it cold for decanting. After 24 to 30 hours the wort is racked to stainless steel fermentation tanks to begin fermentation at low temperatures. Selected yeasts are used to start fermentations that take between 10 and 12 days. After fermentation, the wines remain in contact with the lees for 3 to 4 weeks. After cold stabilization and light filtration the wine is bottled and stored for 4 weeks before being released.
TASTING NOTES
Pale yellow txakoli, bright and clear, with green reflections. The intense citrus aroma of white flowers and ripe tropical fruit at the base gives it character of complexity. Round and smooth in the mouth with a crisp acidity balanced with low alcohol.
