Integrated viticulture, respectful with the environment, minimal intervention, a perfect adaptation to the ‘terroir’ and without the use of herbicides or systemic products, in line with the biorhythms of nature. Organic fertilizer.

Exclusively manual with rigorous selection of the fruits that are in optimal sanitary and ripening conditions in the vineyard and in the winery through a selection table.
Harvest date: second week of October 2013.
Tempranillo (100%) Tempranillo from vineyards over 30 years old.
VINIFICATION
Traditional destemming (100%). Alcoholic fermentation for 8 days with native yeast selected from our own vineyards and temperature control between 28oC and 30oC. Post-fermentation maceration with the skins for 14 days. Pumping over twice a day until the end of fermentation. During maceration, the frequency of pumping over is decreased as the process progresses, to avoid the extraction of vegetable and bitter characters.
AGING
In French (50%) and American (50%) oak barrels of 225 l. for 18 months. Barrel age: 20% new, 80% maximum of 3 wines. Racking every 4 months. Bottle: Bottled unfiltered in January 2015.
TASTING NOTES
Bright ruby-tile red with a good layer. Intense, complex and warm aroma on the nose, with an elegant bouquet of aging and a wide range of well-assembled sensations, perceiving the notes of fresh and ripe fruit, combined with hints of spices, vanilla and toast. On the palate it is velvety, complex and full, strongly developing notes of ripe red fruits. Good structure and tannic balance, powerful and elegant. In the aftertaste, the notes of toasted, vanilla and light balsamic touches are strongly appreciated, with the sensations of red fruits standing out. Long and persistent finish.
