Cantovera 9 months
This wine is an authentic expression of the Ribera del Duero, made from 100% Tinta del País (Tempranillo) grapes. This variety, grown in our region, is characterized by its small grains and thick skin, which contribute to a deep cherry red color and a remarkable concentration of fruit, distinctive of the wines of this designation of origin.
PRODUCTION
Cantovera comes from a meticulous manual harvest. Maceration lasts approximately 20 days, guaranteeing a perfect extraction of its flavors and aromas. Alcoholic fermentation occurs at 28ºC in truncated cone-shaped tanks, followed by malolactic fermentation in stainless steel. This method ensures a unique smoothness and complexity in the wine. Cantovera matures for 9 months, in French oak barrels (50%) and American oak barrels (50%). It then spends an additional 6 months in a French oak vat, where a weekly batonage process takes place. This method intensifies its body and flavor profile.
TASTING NOTES
This wine has a bright cherry red colour and violet hues. On the palate, it offers a balanced and structured sensation, with a smooth finish that leaves persistent aromas of cocoa and spices, reflecting the richness of the Ribera del Duero.
