Ondarre VII
Bodegas Ondarre was founded in 1985 in Viana (DOCa Rioja), as a result of the concern to develop the concept of terroir wine in an area with a unique typicity, defined by the diversity of soils and the arrangement of small and old vineyards on ascending slopes. towards the Sierra de Codes. The name of the winery is a tribute to the family farmhouse that dates back to 1450 and is located in Azpeitia. His philosophy is to obtain wines with very particular features, in which he seeks to reflect the expressiveness of each variety with the attributes provided by the area from which the vineyards come. A life, a culture and a tradition dedicated to transforming the attributes of our land into the highest expression for the senses.
The secret of a great wine is having the best grapes. For this reason, the vineyards of Bodegas Ondarre are located around Viana, where the weather, the soils, the orography of the land and the cultivation practices are the keys for the wines to reflect the exceptional “terroir”. The peculiarity of this area is the presence of 7 minority soils described in the DOCa.Rioja, with vineyards facing south and heights of more than 500 meters. Low-yield vineyards are chosen, planted in goblet and over 30 years old, located on key soils and on which a meticulous selection of the grapes is carried out.
ELABORATION

Limestone and shallow soils, outcrops of gypsum and limestone and light, well-drained deep soils. Healthy fruit and just ripe enough to get a ‘guard wine’. Fermentation between 18 and 24 oC in order to preserve the aromas of Tempranillo and Mazuelo. Maceration times around two weeks, with daily pump-overs. Thus, the quality components are extracted, maintaining the fruity aromas. Aging in American and French oak barrels for 12/16 months with periodic racking.
