Recoveco San Julián
VINEYARD
Grapes from a plot: San Julián in Laguardia planted in 1955.
Grape varieties: 95% Tempranillo and 5% other varieties.
Cultivation: Organic viticulture with biodynamic and regenerative practices.
Harvest: Manual in 15kg boxes. Selection in the vineyard and in the winery.
Soil: Extremely chalky with limestone.
ELABORATION
Method: Vinification in concrete tanks with cold pre-fermentation.
Fermentation: With 20-day indigenous yeasts with very smooth trampling and pumping over. Malolactic fermentation.
Aging: 18 months in French oak barrels.
Bottling: Without clarification or stabilization.
TASTING NOTES
Complex nose with hints of ripe cherry and fine aromatic herbs. Subtlety and elegance. Fine and silky tannins. Lush and delicate.
SERVICE
Between 14º-16º. Open half an hour before to appreciate all its qualities.
CONSUMPTION: Today or in the next 20 years.
