Grape variety: Tempranillo 95% and 5% others.
VITICULTURE
Biodynamic viticulture. Maximum respect for the environment and its ecosystems to extract the uniqueness of the oldest and most special plot of the family.
HARVESTING
15 kg boxes manual. Selection of one or two bunches in the vine. Second selection in the cellar. Yield of 3000kg / ha.
SOIL
Deficient with a large load of clays and limestones.
ELABORATION
Alcoholic fermentation with indigenous yeasts for approximately. 20 days with very smooth trampling and pumping over, going to malolactic fermentation in 600L amounts. 18 months in 600L French oak casks. Bottled without clarification or stabilization.
TASTING NOTES
Deep and elegant wine. Notes of an explicit nature. Unmatched amalgam of nuances and sensations. A message full of contrary reflections.
