Vineyard and Philosophy
Txakoli Iturregi is crafted from the vineyards surrounding the boutique hotel that shares its name in Zumaia, at the heart of the Getariako Txakolina Designation of Origin. The vines are cultivated with deep respect for the natural environment and through meticulous manual work, aiming to capture the pure essence of the coastal landscape.
The Hondarrabi Zuri grape thrives on gentle slopes facing the Cantabrian Sea, rooted in clay-limestone soils that bring freshness and a distinct mineral edge. The vineyard is managed under sustainable practices —no herbicides, minimal intervention, and natural control of vine growth— to preserve the balance between plant and terroir.
Each plot is tended individually, and hand harvesting ensures that only the healthiest, perfectly ripened bunches are selected, producing grapes of vibrant acidity and clean, aromatic expression.
Winemaking
The vinification process at Iturregi combines traditional craftsmanship with modern precision. After a first selection in the vineyard, the grapes are gently pressed, and the juice is clarified by natural gravity. Alcoholic fermentation takes place slowly at low temperature in stainless steel tanks and chestnut wood vats, preserving the grape’s authentic character.
Once fermentation is complete, the wine rests on its fine lees for several weeks, with periodic bâtonnage that enhances texture and complexity. Every stage of production is carried out by gravity flow, avoiding unnecessary pumping and maintaining the wine’s natural energy.

Color: Pale straw yellow with greenish reflections, bright and clear.

Nose: Intense aromas of white fruit —pear and apple— accompanied by citrus hints, delicate floral notes, and a subtle saline background.

Palate: Fresh, balanced, and elegant. The lively acidity blends harmoniously with a round mouthfeel derived from aging on lees. Persistent mineral finish that recalls the sea breeze of Getaria.
Suggested pairings: Perfect with Cantabrian fish, shellfish, warm salads, white meats, and soft cheeses.
