ELABORATION AND AGEING
Everything is art in the Ramón Bilbao Mirto: since the clusters are chosen at the selection table in the cellar to the fermentation in small French oak vats. After careful fermentation contralada temperature for maximum extraction of aromas and color, Ramon Bilbao Mirto passes barrels where malolactic fermentation without decanting is performed only with the technical meditator removed from the lees of “bâtonnage”. Fulfills a period of 22 months in new French oak barrels Aller, whose level of toasting has been chosen for this vintage espcial. The wine is bottled without any filtration process or clarifiación.
Intense cherry red with maroon trim. Complex and powerful nose, dominated aromas of black fruit, coffee beans with subtle hints of toast, frafito and cocoa. The palate is enveloping and sweet with very fruity and fresh notes of plums with menthol and spicy, while deploying a wide range of varietal nuances. Lingering aftertaste with a pleasant, expressive and final round.
SERVICE AND FOOD PAIRING
Temperature between 18 and 19ºC thought. beautifully accompanies dishes with vegetables and smoked flavors like mushrooms and truffles. Dish goes well with subtly epeciados stews and soft cheeses half cure unsmoked. Recommended with burly but creamy cheeses (Stilton).
