VARIETAL
Tempranillo wine made from grapes carefully selected from vines over 50 years, located more than 500 meters of altitude age. It has been aged for 12 months in barrels of French and American oak. 100% Tempranillo. Hand picked grapes in vineyards more than 52 years of age, arranged in glass and placed between 500 and 600 meters. This mixture of grapes accounts for 2% of the production of our vineyards, which perfectly explains the level of selection that has been carried out.
HARVEST
Rated as very good. Rainfall and its distribution throughout the cycle were sufficient for the period brotación-fruit set. August is drier, with just storms, and temperatures are softened, being moderate day and low at night, ideal for ripening. In early September, high temperatures stop the maturational evolution, and since then irregular, so you should do selective harvest. The weather a week and enters the grapes in good health, thanks to the advancement of about 10 days compared to 2005.
WINEMAKING
The stripped and squeezed grape is macerated cold for 36 hours. Then tempered and starts alcoholic fermentation, which proceeds at the 25th C. After 12 days of maceration and the dried wine, this is separated by gravity and the second fermentation (malolactic) spontaneously takes place after a month.
BREEDING
Twelve months in oak barrels a year with a mixture of 40% + 60% American oak French oak. one racking is performed to clarify wine with egg albumin in stainless steel tanks after which the wine is cleaned by decanting thus being ready for bottling.
VIEW
clean and coat with trim pillory intense ruby on the edge and core.
NOSE
Modern wine cutting sight and touch, although its aromatic complexity brings you closer to the quality of a special reserve: sloes, macerated cherries, chocolate liquor, dried bamboo, cocoa and some vanilla and smoked.
MOUTH
Not tannic, with good acidity. Balanced touch sapid sensations of sour fruit and spices returning in aftertaste, just as we recover some of the complexity that we perceived in the nose.
