CERRADO DEL CASTILLO
The Cerrado del Castillo is only made when the harvest reaches the maximum expression of the terroir and also balance is total. This only happens on rare occasions, with suitable climate for a perfect ripening vintage.
It is a wine made from a vineyard of 35 years of Tempranillo located within the walls of the Castle. After a rigorous selection of grapes and, after completion of the alcoholic fermentation, the wine is barrels in the cellars of the castle, where it rests for about 18 months.
After a rigorous selection of grapes on a table destrío and at the end of the alcoholic fermentation, the wine goes into barrels for malolactic fermentation in new French oak barrels superfine grain Bordeaux bottles barrels and medium toast, followed by a clrianza on its lees in the same wood of 18 months, and ending with bottling in May 2010 without any previous clarification or stabilization process.
TASTING NOTES
Red wine of deep cherry red color, with intense and elegant aromas. The Cerrado del Castillo in mouth Good balance and aromatic persistence that makes it a long gan came with a number of flavors, and a nice finish accompanied with an important aromatic development envelope, which encourages them to continue drinking. It presents a genuine unrepeatable and sensory characteristics of its origin.
