Ramón Bilbao Reserva Original 43, is the legacy in time of the person who forged in our company a unique way of understanding the world of wine and that today remains unchanged. A wine with deep roots in our memories that allows us to preserve and share the spirit of the person who always believed in wine.
VINTAGE 2014: The viticultural cycle has been characterized by high rainfall. It began with a wet and cold winter, giving way to a warm spring, which favored optimal sprouting and a good start of vegetative development. The summer has been cool and with high humidity, thus generating slow ripening. The end of summer and the beginning of autumn has been hot combined with rainy days, giving rise to a heterogeneous ripening. Thanks to a great work in the field, it has been possible to harvest in each of our plots in its best viticultural moment.
VITICULTURE: Integrated viticulture, minimal intervention and following the vegetative cycle of the vineyard to achieve maximum adaptation to its natural conditions. Organic fertilizer.
HARVEST: Fourth week of October 2014. Exhaustive selection of two vineyard plots located in Villalba de Rioja, border area of cultivation. Manual harvest in boxes, with selection of bunches in optimal ripening and sanitary conditions in the vineyard and in the winery using a selection belt. Tempranillo (100%) from two vineyards planted in 1942 and 2005.
WINEMAKING: Traditional elaboration. Cold maceration with dry ice. Destemming, with daily pump-overs combined with delestage and punching. Fermentation in a wooden vat at a controlled temperature (28ºC). Malolactic fermentation in barrels. Aging: 20 months in 225l single-use French oak barrels.
Ruby red color, medium-high layer. Clean, bright and with the presence of tears.
Medium intensity nose. Clean and frank. Fresh aromas of ripe red fruit, nuts (fresh almonds), floral aromas (violets) and balsamic nuances. All of them combined with aging aromas: bakery, biscuit, spices, white chocolate aroma, liquor bonbon and also bottle aging, clean leather aroma and complexity.
In the mouth it is intense. Good acidity (medium-high), round tannins. Balanced alcohol. Long. In retronasal the sensations perceived in the nose of red fruit, balsamic and aging reappear. In conclusion, it is a very balanced wine, in harmony, in a state of evolution, with a long journey.
SERVICE AND PAIRING
Consumption temperature between 18ºC and 20ºC. Perfect to accompany veal, smoked meats, soft cheeses and international food.
