High altitude vineyards of Ramón Bilbao, made in a unique place at an altitude of more than 700 m, where the extreme conditions transmit characteristics to the grape that are impossible to find elsewhere.
VINEYARDS
Spread over two areas: Ábalos provides the Tempranillo and Tudelilla the Garnacha. Altitude higher than 700 m, which gives the fruit freshness and elegance.
ELABORATION
Cluster selection and maceration before fermentation to extract aromas and colors. The two varieties are fermented separately to obtain different nuances. Malolactic fermentation in French oak vats in contact on lees. Aged for 15 months.
TASTING NOTES
Ruby red color, of medium high intensity, clean and bright. With the presence of tears. Clean and frank. The aromatic profile is very original. The Grenache is expressed in the form of a cherry and the tempranillo leaves a clear trace of black fruit. Vibrant, presence of acidity, medium body and round, ripe and quality tannins. In retronasal it is rich in fresh aromas of fruit and aromatic herbs.
PAIRING AND SERVICE
16-18 ° C. Oriental-style meats, Galician veal chop and intense cold meats. Stilton type cheeses.
